    boneless chicken breasts, boiled
  • 1
    medium onion, chopped
  • 2 c
    reserved chicken broth
  • 38 oz
    canned white kidney beans (drained)
  • 2 small
    cans chopped green chiles
  • 3 Tbsp
    sour cream
  • 2 tsp
    ground cumin
  • 1 tsp
    oregano
  • 2 tsp
    garlic powder
  • 1 tsp
    cilantro
  • 1/4 tsp
    ground red pepper

How to Make Chicken and White Bean Chili

Step-by-Step

  1. Cut chicken into bite-size pieces.
  2. Saute chopped onion in small amount of oil.
  3. Add chicken and onion to chicken broth.
  4. Add chiles and all seasonings.
  5. Cook on low heat 15-20 minutes.
  6. Stir in kidney beans and sour cream.
  7. Continue cooking another 10 minutes.
  8. Serve topped with shredded monterey jack cheese and crushed tortilla chips.
