This recipe is a family fav! I like to do my own thing when it comes to soup. I was looking though my frigde and the ingredients were just there....and I tried it! It was welll worth it!

rotisserie chicken, precooked and store bought r the best!
purple onion, chopped
red bell pepper, chopped
olive oil, extra virgin
carrot, diced small
cream cheese, room temperature
salt and pepper, each
1 1/2 c
egg noodles, uncooked, the smaller the better
How To Make
Saute onion, bell pepper, and garlic in a skillet with the butter and olive oil until tender.
Add milk and cream cheese. Cook until cheese is melted into mixture.
Debone chicken and use as much meat as you want. If there are big peices you can chop them up or pull it apart.
In a dutch oven, combine chicken broth, chicken, veggie mixture, and seasonings. Stir until it is mixed well.
Let soup simmer on medium/low for about 30 minutes to an hour.
Add noodles and cook for another 15 minutes.
If desired, you can garnish with some fresh chopped parsley or some shredded carrots. ENJOY!
