Light and Flavourful Chicken Mushroom Soup
This recipe is suitable for a very small family, but could be easily doubled.
1 cdiced onion
1 largecarrot, diced
1 stalk(s)celery, diced
1 cmushroom, diced
2boneless chicken thighs, diced
4 cmushroom broth
1 tspthyme, dried
How to Make Light and Flavourful Chicken Mushroom Soup
- Sweat the onions and celery in a saucepan for a couple of minutes.
- Add the rest of the ingredients and bring to a boil.
- Simmer for 30 minutes or until vegetables are tender and chicken is cooked through. Correct the seasonings.
- Serve with cheese biscuits or buttered toast.
