This is my favorite soup of all time. I love the italian seasons and the little meatballs. This is a very easy recipe but tastes like you fussed all day. The Escarole mentioned is like a lettuce and you cut it up finely and just let it float on the soup. If you're familiar with this soup you know what I'm talking about. Ingredients For italian wedding soup

  • 1lb. lean hamburger
  • 1 egg
  • 1/2 c italian bread crumbs
  • 3 tablespoon parmesan cheese
  • 1/4 cup minced onion
  • 1/4 teaspoon pepper
  • 12 c chicken broth
  • 1 teaspoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon celery salt
  • 2/3 orzo pasta (easy to find near pastas)
  • 2 c sliced escarole
  • grated parmesan to taste

How To Make italian wedding soup

    Mix the beef, egg, crumbs, cheese, onions, and pepper. Shape into little meatballs, about 1/2 inch in diameter. Heat broth, onion powder, garlic powder and celery salt to boil in 6 qt.soup pot. Stir in raw meatballs. Reduce heat and cook 10 minutes. Remove meatballs and set aside. Stir orzo in broth. Cook 10 minutes until tender. Add Escarole. Return meatballs to broth and cook on simmer until meatballs are heated through. Sprinkle each serving with a good dose of parmesan cheese. YUM!
