How to Make Hearty Chicken Noodle Soup

  1. Combine chicken pieces and broth in a heavy large pot. Add all other ingredients, except carrots and noodles. Bring to a boil. Reduce heat; simmer until chicken is cooked through, about 30 minutes. Remove chicken and discard skin and bones. Cut chicken into bite size pieces and remove. Skim fat off of top of chicken broth.
  2. Add carrots and simmer about 8 minutes. Strain soup. Stir in uncooked noodles and reserved chicken. Simmer noodles, about 4 to 6 minutes. Salt and pepper to taste.
