If chicken noodle is the Jewish antibiotic then this is its Scottish cousin on steroids. This really is good for what ails you. Traditional Scottish soup/stew. Its somewhere in the middle. Rich &hearty. My onion hating daughter LOVES this stuff. Yes it calls for prunes. Don't let that put you off. Old days before sugar as we know it they would add fruit into the savory meats. It doesn't make the soup sweet by any means but adds a nice rich earthy flavor to. I met a Scot lady at radiation treatment. Had made some & took her some. Ingredients For cock a leekie soup.

  • 1/2
    chicken
  • 2 qt
    chicken stock
  • 2 lg
    leek
  • 4 clove
    garlic
  • 1 c
    uncooked barley
  • 1/3 c
    sliced prunes
  • To taste
    salt
  • 3 Tbsp
    oil
  • 1 Tbsp
    each of rosemary and thyme

How To Make cock a leekie soup.

    I make my own stock boiling the chicken and adding an onion carrot celery some herbs.. but store bought work a fine. Just need 2 qts of stock

    Cook 1 cup of barley as directed on product

    Wash leeks well they hold dirt! Slice In to rounds 1/3 -1/2 inch thick.

    Heat oil toss in garlic rosemary and cut leeks. Cook stirring often until leeks are bright green and the white is semi translucent.

    Add 2qt of stock and cooked cut up chicken( small bite size) 2tsp of thyme simmer an hour

    Add barley simmer an hour.. stir occasionally

    Add sliced prunes and simmer 10 minutes. Done
