Ingredients

  • 2 Tbsp
    olive oil
  • 1
    yellow onion, diced
  • 2
    carrots, chopped
  • 1
    red bell pepper, diced
  • 3
    plum tomatoes chopped
  • 1
    zucchini, cubed
  • 4
    garlic cloves, minced
  • 8 c
    chicken broth
  • 15 oz
    chickpeas
  • 3 c
    chicken breasts, cooked and cubed
  • 2 tsp
    salt to taste
  • 1/2 tsp
    pepper to taste
  • 1/2 c
    small pasta
  • 1/2 lb
    green beans
  • 1 c
    green cabbage, chopped
  • 2 c
    fresh spinach leaves
  • 8
    basil leaves
  • 3 Tbsp
    oregano
  • 1/2 c
    grated parmesan cheese

How to Make Chicken Vegetable Minestrone

Step-by-Step

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add the onion and cook, stirring often, until the onion is translucent.
  3. Add carrots, bell pepper, tomatoes and zucchini and cook, stirring occasionally until vegetables are soft and lightly browned.
  4. Add garlic and cook 1 minute longer, be careful not to brown garlic.
  5. Add broth, chickpeas, chicken, salt and pepper and bring to a boil over medium heat.
  6. Reduce the heat to low and simmer uncover for at least 1 hour.
  7. Add pasta, green beans and cabbage, bring a boil and simmer for 10-15 minutes.
  8. Stirring occasionally.
  9. Stir in spinach, basil and oregano and simmer for 10-15 minutes, until pasta is done.
  10. Top with some grated parmesan cheese.
  11. Serve with crusty bread.
