Ingredients

  • 1 Tbsp
    olive oil
  • 1 medium
    onion diced
  • 4 clove
    garlic minced
  • 1 tsp
    each red pepper flakes and crushed fennel seeds
  • 8 c
    chicken stock
  • 1 lb
    chicken breast cut into bite size pieces
  • 28 oz
    can crushed tomatoes
  • 1 Tbsp
    tomato paste
  • 1 tsp
    italian seasoning
  • 6 oz
    pasta
  • 1/2 c
    grated parmigiano reggiano
  • ·
    salt and pepper to taste
  • ·
    handful fresh basil chopped

How to Make chicken Parmesan Soup

Step-by-Step

  1. Heat the oil in large sauce pan over medium heat. Add the onion and saute until tender. Add the garlic red pepper flakes and fennel seeds cook about 1 minute
  2. Add the chicken broth, chicken, tomatoes, tomato paste, Italian seasoning, salt and pepper, Bring to a boil, reduce to a simmer and simmer about 5 minutes.
  3. Add the pasta and simmer 15 minutes until al-dente. Mix in the Parmesan until it melts, taste and adjust the seasoning with salt and pepper. Mix in the basil.
