Ingredients For cheeseburger soup

  • 1/2 lb
    lean ground beef
  • 1/4 c
    chopped onion
  • 8 slice
    bacon
  • 2 can
    10 oz. each. cheddar cheese soup
  • 2 can
    12 oz. each evaporated milk like pet or carnation
  • 1/2 c
    cheddar cheese, shredded

How To Make cheeseburger soup

  • 1
    In a medium skillet with cook bacon until crispy; set aside to cool on paper towels. To the same pan and using the grease already in the pan over medium heat add ground beef and onions and scramble and brown until beef is no longer pink. Drain grease.

    Place beef mixture in a medium saucepot, add crumbled bacon(reserve 2 T. for garnish), cheese soup, milk and cheese. Mix and simmer over low heat until hot about 20 minutes.

    Serve in bowls garnished with cheese a little bacon and chives, sour cream too if you wish and have plenty of garlic toast on hand or croûtons. If desired add 1/2 cup uncooked elbow macaroni to soup before simmering.
