  • 1 Tbsp
    olive oil
  • 1 lb
    ground beef
  • 1 bunch
    scallions chopped
  • 2 tsp
    each garlic powder, dried basil, and paprika
  • 1/2 tsp
    black pepper
  • 1 tsp
    each thyme, oregano, and salt
  • 1 c
    marinara sauce
  • 1/4 c
    tomato paste
  • 4 c
    beef broth
  • 2 c
    cauliflower rice
  • 1 Tbsp
    red wine vinegar
  • 1 c
    fresh spinach leaves

How to Make Beef and Cauliflower Rice Soup


  1. Place the oil in a Dutch oven. Brown the meat with the green onions. Add the spices, marinara, and tomato paste.
  2. Pour in the beef broth. Bring to a boil and add the cauliflower rice. Reduce to a simmer and cook 15 minutes. Add the red wine vinegar and spinach and cook 5 minutes.
