This is a very flavorful soup and delicious served with cornbread. I sometimes substitute a cup of cubed ham for the sausage. I do like the sausage the best. You will get compliments on this soup. Double if you have more that 4 people.

    hot or mild italian sausage, browned

    garlic cloves, minced

    petite diced tomatoes

    cooked greens,iused collards.

How to Make Tuscan Bean Soup


  1. Cook beans according to package instructions
  2. Add remaining ingredients and cook until vegetables are tender.
  3. I sometimes substitute a cup of cubed ham for the sausage.
