If you like lentils and garbanzo beans then this is the soup for you. It is wonderful on a chilly Fall day.

Ingredients For spicy soup

  • 1/2 c
    dry garbanzo beans
  • 56 oz
    chicken stock
  • 1 c
    dry lentils
  • 1 lg
    onion, chopped
  • 1
    rib celery, chopped
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    ground ginger
  • 1/4 tsp
    ground red pepper
  • salt & pepper to taste
  • 1/4 c
    uncooked rice
  • 3 c
    tomatoes, chopped
  • 1/4 c
    fresh parsley, chopped
  • 2 Tbsp
    fresh cilantro, chopped

How To Make spicy soup

  • 1
    Sort and rinse garbanzo beans. Put in large pan and cover with water; let soak overnight. Next day, drain beans and pour chicken stock into pan with beans. Bring to a boil, then reduce heat to low and let simmer 1 hour.

    Sort and rinse lentils. Add to garbanzo beans along with onion, celery, cinnamon, ginger, ground red pepper, salt, & pepper. Simmer, covered, 45 min. or until lentils are tender.

    Stir in rice and tomatoes. Bring to a boil over med heat, then reduce heat to low and simmer another 25 min. until rice is tender.

    Stir in parsley and cilantro and simmer another 5 min. Serve with crusty rolls or garlic bread.
