Ingredients

  • 3 Tbsp
    olive oil
  • 3
    carrots, diced
  • 3
    celery stalks, diced
  • 4
    garlic cloves, minced
  • 1
    onion, large, diced
  • 1 pkg
    kielbasa, diced
  • 1 lb
    bacon, cooked and crumbled
  • 8 c
    beef stock
  • 1 lb
    lentils, dry, rinsed
  • 1 can(s)
    crushed tomatoes, 28 ounces
  • 1 tsp
    italian seasoning
  • 1 1/2 - 3 tsp
    balsamic vinegar (takes it from a good soup to a wonderful soup..don't skip it)
  • 1 tsp
    pepper
  • ·
    salt to taste

How to Make Lentil Soup with Kielbasa

Step-by-Step

  1. Heat olive oil. Add onions, carrots, celery and garlic. Cook until onions are translucent.
  2. Add remaining ingredients except for the balsamic vinegar. Bring to a boil.
  3. Turn heat down and simmer covered until lentils are cooked through and carrots are tender. If the soup gets too thick add a cup of water or stock. I always use stock.
  4. Turn off heat, add balsamic vinegar and stir in well.
  5. Serve with french bread and butter. Enjoy!!
