My Grandmother used to make a simpler version of this soup using just ground hamburger. I decided to give my take on her soup and it turned out so warm and comforting on a cold day. It's become a favorite for my family.

Slow Cooker Crock Pot


  • 2 1/2 c
    dried pinto beans, no need to soak them
  • 32 oz. + 2 c
    chicken broth
  • 1 c
    chopped onion
  • 2
    carrots, peeled and chopped
  • 1 rib
    celery, chopped
  • 1 large
    garlic clove, minced
  • 10 oz
    diced tomatoes with green chilies
  • 1 lb
    breakfast sausage, cooked and drained
  • 1
    bay leaf
  • 1/4 tsp
    smoked paprika
  • ·
    salt & pepper to taste

How to Make Crock Pot Pinto Bean Soup


  1. Put all the ingredients in your crock pot, cover and cook on high for 6 1/2 hours.
