My husband and son love black beans so I keep cans of black beans on hand so they can whip a bowl of soup anytime they want.

Ingredients For black bean soup

  • 1 md
    onion, diced
  • 2 clove
    garlic, minced
  • 1
    jalapeno pepper, diced
  • 2 c
    cooked black beans
  • 1 can
    diced tomatoes
  • 2 c
    water
  • 1 tsp
    cumin
  • 2 Tbsp
    olive oil, extra virgin
  • kosher salt to taste
  • cilantro, fresh for garnish
  • 1 md
    avocado, cut into pieces for garnish, optional

How To Make black bean soup

    In a 4 a 4 quart saucepan, heat oil over medium heat. When oil is hot, add onion and cook for 3-4 minutes. Add garlic and jalapeno pepper and cook for 1 more minute.

    Add beans, tomatoes and water. Bring it to quick boil. Add salt, cumin and black pepper for your taste.

    Let it simmer for 10 minutes stirring occasionally. Serve in a soup bowl over brown rice if desired. Garnish with cilantro and diced avocado.
