chai spiced granola

This is a great addition to yogurt or can be eaten with milk as a cereal, but frankly, it's best just tossed in your mouth by the handful. Use your favorite nuts and switch it up each time - hazelnuts, pecans, almonds - and change out the seeds to your liking and include sesame, sunflower or flax seeds. Lightly spiced, lots of crunch, good source of fiber.

Ingredients For chai spiced granola

  • 1 1/2 c
    packed brown sugar
  • 3/4 c
    chai tea (see below)
  • 3 c
    rolled oats
  • 1 c
    rice krispie cereal
  • 1 1/2 c
    chopped almonds
  • 1 1/2 c
    chopped walnuts
  • 1/2 c
    pumpkin seeds
  • 1/8 c
    flax seeds
  • 1/8 c
    chia seeds
  • 1/3 c
    coconut oil
  • 2 1/2 tsp
    pure vanilla extract

How To Make chai spiced granola

    Preheat oven to 275 degrees F.

    Heat 3/4 cup of water to boiling and steep one chai tea bag for about 5 minutes. Squeeze out the tea bag. Add to a small saucepan with brown sugar. Cook over low heat until sugar is dissolved. Set aside to cool about 10 minutes.

    Combine oats, cereal, nuts and seeds in a large bowl and mix.

    After the sugar is cooled, add the coconut oil and vanilla. Stir well to mix.

    Pour the sugar mixture over the oats and nuts. Mix well.

    Spray a cookie sheet with non-stick cooking spray. Spread oat mixture evenly on the sheet. Bake for 70 minutes. Turn oats over, keeping in large chunks, and return to oven for an additional 30 minutes. Turn the granola again, making sure the sugar coating looks dry - continue baking for 5 minute intervals if necessary.

    Cool completely before breaking into bite sized pieces. Store in a resealable container.
