I first had this at my brother's house when my family was there for Thanksgiving. I just served this at a ladies' lunch last Saturday at my house, and it went over like gangbusters. It's so good...I think I need an excuse to make it again. When you purchase the brie, it will have a "skin" on it that is usually white. With this recipe, you will want to slice off the top and sides. You can eat the "skin," so don't worry about leaving it on the bottom.

Baked brie is an elegant and easy appetizer. Using pizza dough, rather than puff pastry or crescent dough, adds a rustic touch to this recipe. Apricot preserves add sweetness and there's a hint of orange liqueur. We loved the crunch that slivered almonds add. This baked brie appetizer will be popular whenever you serve it. Great for a friend's night in, a holiday appetizer, or a party.

  • 1 can
    Pillsbury thin pizza dough
  • 1
    wedge of brie
  • 3/4 c
    apricot preserves
  • 1 tsp
    Grand Marnier
  • 1/2 c
    slivered almonds
  • crackers for serving

Test Kitchen Tips
You'll have enough dough and preserves for 2 8-ounce wheels of Brie or a larger 13-15 oz wheel. If you don't have Grand Marnier, any orange liqueur can be substituted.
  • Oven preheating to 425 degrees.

    Preheat your oven to 425 F.
  • Trimming skin off the wheel of Brie.

    Unwrap the Brie and cut the skin off the top and sides. Leave the skin on the bottom.
  • Brie in a pie pan.

    Place the Brie in an ovenproof dish (approx. 8 inches in diameter).
  • Pie crust cut into slices.

    Open the can of thin pizza crust and remove the dough. Cut the roll of dough into 1-inch pieces.
  • Rolling pizza crust into slices.

    Roll each piece of dough in a pencil shape, approximately three inches long.
  • Wrapping Brie with pieces of pizza dough.

    Surround the Brie with the dough, filling the empty spaces and overlapping where necessary.
  • Preserves and orange liqueur on top of the Brie.

    Pour enough apricot preserves on the top of the Brie wedge to cover it entirely. You may use more or less than the 3/4 cup. Add the Grand Marnier to the preserves. This is an optional step. The Brie is just as good without it.
  • Slivered almonds sprinkled on top.

    Top the dish with the slivered almonds. Bake for 18-20 minutes depending on the hotness of your oven.
  • Baked Brie Appetizer on a platter with crackers and apples.

    When the Brie is melted and the pizza dough is golden brown, remove it from the oven. Let your guests top the crackers with the Brie and they'll be happy campers! (I used Townhouse crackers.)
