This is such an easy recipe and great served as an appetizer at brunch or club. It has just the right bite. My family and friends always enjoy this recipe. Ingredients For reuben casserole for the microwave

  • 2 c
    sauerkraut,rinsed and drained
  • 10 oz
    corned beef in can
  • 12 oz
    shredded cheese
  • 1/4 c
    salad dressing or mayo
  • 1/2 c
    thousand island dressing
  • 1 Tbsp
    lemon juice
  • 1 md
    tomato , sliced thin
  • 2 tsp
    basil, dried
  • 2 slice
    rye bread, crumbled and toasted

How To Make reuben casserole for the microwave

    Drain and rinse sauerkraut and place on bottom of a buttered 9x13 inch glass dish.

    Place corned beef evenly crumbled on top of sauerkraut. Sprinkle cheese on top of sauerkraut.

    Combine both dressings and lemon juice and spread evenly over cheese.

    Top with tomato slices sprinkle with basil. .Microwave for 3 minutes or until cheese has melted. Remove from microwave and sprinkle with toasted bread crumbs. Let set for 2 to 3 minutes and serve on or with rye bread.
