I love to make these with the juice that's left over after having a beet salad. The color is fun, and I've even had friends that don't like beets love these.

    eggs, hard boiled and peeled
  • 2 can(s)
    beet juice from 2 15oz.
  • 1 Tbsp
    garlic powder
  • 1 Tbsp
    onion powder
  • 1/2 tsp
  • 1 tsp
  • 1/4 c
    olive oil, extra virgin
  • 3/4 c
    apple cider vinegar

How to Make Pickled Eggs


  1. Hard boil and peel 1 dozen eggs
  2. mix together remaining ingredients in a non reactive jar or bowl
  3. add eggs making sure they are covered with the liquid.
  4. soak eggs at least over night, the ones pictured were in for around a week.
