fried egg with a sweet onion on rye toast...yum!

You will have to try this to believe how good it tastes. I have served this sandwich many times to the truckers in our Lounge & Restaurant, across from Midway Airport in Chicago. In the late 70's. It was my own recipe, and the long -hall truckers loved it, in the morning before they got back on the road heading west. The restaurant motel,space is now a parking building for the Chicago Midway Airport. When you just want a snack, it cooks up in a couple minutes, and will satisfy your hunger pains! Be sure to use a sweet onion. A Vidalia,or a Walla Walla would be great. 5/7/12

    soft fried egg
  • 2--3
    thin slices of sweet onion, i used a walla walla onion
  • 1 tsp
    mayonaise
  • 2
    slices rye bread, toasted, i used russian rye!

    Fry 1 egg softly

    Slice sweet onion, very thin
  • 3
    Toast 2 pieces of rye bread.

    Spread mayonnaise on the toast. Put the onion,and egg,on the toast,slice in half. Now enjoy... a great snack!! So simple and so good!!
