Who doesn't need a little "boost" of energy in the middle of the afternoon? This snack is packed with super healthy ingredients!

Ingredients For energy berry bites

  • 2/3 c
    shredded coconut flakes, unsweetened
  • 1/4 c
    flaxseed
  • 1/4 c
    wheat germ
  • 3/4 c
    whole rolled oats
  • 3/4 c
    peanut butter, melted
  • 1/3 c
    agave nectar
  • 2 Tbsp
    goji berries, soaked in water for 15 minutes, if needed
  • 2 Tbsp
    dried blueberries
  • 1 Tbsp
    pumpkin seeds
  • 1 Tbsp
    sunflower seeds
  • 1 Tbsp
    chia seeds
  • 1 pinch
    ground himalayan sea salt

How To Make energy berry bites

    In a small skillet over medium heat, toast coconut flakes until golden. Remove from the heat and let it cool.

    Place flaxseed in a spice grinder and process until well ground.

    In a large bowl, combine oats, toasted coconut, flaxseed meal, wheat germ, peanut butter, agave nectar, goji berries, blueberries, pumpkin seeds, sunflower seeds, chia seeds and sea salt; stir well.

    Transfer to the refrigerator for 30 minutes to chill.

    When ready to roll, wet hands lightly so the mixture doesn't stick and form ball to about 1 1/2-inch diameter.
