It is a must have gift to family and friends every Christmas. I am required to ship all across the U.S. to family and their friends too! Once you've made it, any "store bought" brittle will never be the same. I know you'll love it!

Ingredients For fast and easy microwave peanut brittle

  • 1 c
    sugar
  • 1/2 c
    light corn syrup
  • 1 c
    dry roasted peanuts
  • 1 Tbsp
    butter
  • 1 tsp
    vanilla
  • 1 tsp
    baking soda
  • 1

    8 cup glass bowl w/handle
  • parchment paper

How To Make fast and easy microwave peanut brittle

  • Sugar, peanuts, light corn syrup, butter & vanilla and baking soda

    Have all ingredients measured and available before beginning. Indoor humidity must be below 50%. Use an 8 cup GLASS mixing bowl with handle. In glass bowl, add first two ingredients. Microwave at 90% power for 4 minutes
  • After heating sugar and corn syrup, add peanuts. Should be bubbly.

    As soon as time is up, do a quick mix so that the light corn syrup is integrated with the sugar. Pour peanuts over the top. No need to mix. Microwave at 90% power for 3 minutes.
  • Just add on in the butter and vanilla. Notice how bubbly.

    Next, add butter and vanilla. You can shake the bowl a little to spread around. Microwave at 80% power for 2 minutes.
  • Added baking soda.

    Once the timer goes off, Immediately remove and add the baking soda and start mixing. Everything will start to solidify right away. While you are still mixing (it will only need two or three turns), start pouring onto your cookie sheet, lined with parchment paper. Using a flat wooden spatula, sprayed with oil, flatten out the brittle as fast as you can.

    FYI: This all takes a bit of practice and experimenting. You may have to adjust your power levels and time so as not to burn. Flattening the brittle thin also takes some practice and muscle. I've tried putting heavy pans on top and leaning on them to thin but I can't see what I'm doing and it still doesn't thin out enough. It is all so worth the work. You will be the hit of your circle of friends and family. ENJOY!!
