Ingredients
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/4 teaspoons salt
- 3 tablespoons vegetable shortening, cut into 1/2" pieces, cold + 2 tbsp melted & cooled
- 1 cup beer, cold
How To Make common crackers
-
Step 1Adjust oven rack to lower middle & preheat oven to 350 degrees F. Set wire rack into a baking sheet. In food processor, add flour, powder & salt & pulse until combined, about 5 pulses. Add cold shortening & pulse until combined, another 5 pulses.
-
Step 2Transfer flour mixture to a large bowl. Stir in beer until combined. Turn dough onto lightly floured surface & knead until dough comes together. Roll dough into a 10" x 7" retangle. Brush with melted shortening, then fold like a letter (working from short edge, fold dough over itself, leaving 1/3 of dough uncovered. Fold opposite uncovered short edge over dough. Roll folded dough into 18" x 7" rectangle, about 1/4" thick.)
-
Step 3Using a 2" biscuit cutter dipped in flour, cut out rounds & arrange on rack lined baking sheet. Gather remaining dough & re-roll & repeat process. Prick dough rounds 2 X with a fork.
-
Step 4Bake until light golden brown & firm, about 55 minutes. Let cool completely, about 1 hour.
