Summer is coming and this is not just a great way to use some of that zuccini but it is easy to make and very good.

Ingredients For zuccini cassarole

  • 3 c
    sliced zuccini
  • 3 c
    sliced onions
  • 3
    eggs
  • 1/4 c
    butter or margarine
  • 1/4 c
    milk
  • 1 c
    shredded swiss cheese
  • 1 tsp
    salt
  • dash
    pepper
  • 1/2 tsp
    dry mustard

How To Make zuccini cassarole

  • 1
    Saute' onions and zuccini in butter until tender. Place in buttered cassarole dish. Whip eggs, seasonings, milk, and 1/2 cheese, pour over top and sprinkle the rest of the cheese over the top. Place in 375 degree oven for 20 minutes
