We have a garden every year and we love the fresh veggies. I think I have made zucchini dishes in every way imaginable and still find more each year. This one is quick and easy while the chicken or other meat is on the grill.

Ingredients For zucchini and vegetable side dish

  • 1/2 c
    macaroni, dry
  • 1/2 lg
    sweet onion, chopped
  • 4 Tbsp
    extra virgin olive oil
  • 1 clove
    garlic, minced
  • 1 md
    zucchini, chopped
  • 3 - 4 md
    tomatoes, cut into quarters
  • 2 Tbsp
    chopped fresh parsley
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper

How To Make zucchini and vegetable side dish

    Boil the macaroni noodles to al dente.

    Saute onion in olive oil until translucent.
  • 3
    Add minced garlic and saute.
  • 4
    Add zucchini, tomatoes, fresh parsley, salt, and pepper.

    Cover and simmer until the vegetables are tender.
  • 6
    Once the vegetables are tender, stir in the cooked macaroni.
