I'm always looking for ways to serve zucchini in the summer time. This is a great recipe to serve with a nice juicy steak or pork chop. You can peel the zucchini if you wish and no one would know it's even in there....kiddos (: In the time it takes to bake potatoes or put that potato salad together, you could serve something different. This would be great for cook outs, potlucks, reunions. In the fall it's a great way to use that lingering zucchini - serve with roasts, ham or make an all in one casserole with the addition of ham or smoked sausage right in the casserole itself. Enjoy!

Ingredients For zucchini hash brown casserole for the grill

  • 3 c
    zucchini, shredded
  • 3 c
    frozen hash browns, thawed - or re-hydrated hash browns
  • 2 can
    cream of mushroom soup
  • 8 oz
    sour cream
  • 1/4 tsp
    each - garlic powder, onion powder, pepper
  • salt to taste
  • 4 slice
    bacon, cooked and diced ( you can substitute ham, smoked sausage ) optional
  • 1 c
    cheese, shredded - i used mild cheddar but sub whatever you like
  • 1 c
    french fried onion

How To Make zucchini hash brown casserole for the grill

    Get your grill ready or preheat oven to 350.

    In a large bowl combine everything except cheese and french fried onion.

    I use disposable aluminum pans for the grill. If baking spray 13 x 9" pan with cooking spray.

    Pour zucchini mixture in desired pan and cover with foil.

    Place on grill or in oven for 50 minutes.

    Remove from grill/oven and remove foil. Sprinkle with cheese and french fried onion. Place back into grill/oven for 10 minutes.
