Ingredients For veggie fritters with onion-topped cheesy drizzle

    onion
  • 1 can
    non-stick cooking spray
  • 8 oz
    shredded sharp cheddar cheese
  • 12 oz
    evaporated milk
  • 1/2 tsp
    dry mustard
  • 2 dash
    cayenne pepper
  • 16 oz
    frozen mixed vegetables, thawed
  • 1/4 c
    finely minced onion
  • 2 clove
    garlic, minced
  • 1 lg
    egg, beaten
  • 1/2 c
    milk
  • 1 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/4 c
    granulated sugar
  • 1/2 tsp
    salt
  • 1/4 c
    olive oil

How To Make veggie fritters with onion-topped cheesy drizzle

    Preheat oven to 325 degrees F. Peel onion; slice in half from top to bottom. Thinly slice onion halves. Spray a non-stick baking sheet with non-stick cooking spray. Spread onions over pan. Spray onions with non-stick cooking spray. Bake at 325 degrees F. for 10 minutes. Remove from oven and stir onions. Return to oven for 10 minutes. Place browned onions on a small plate. Return pan to oven and cook until all onions are lightly browned.

    Meanwhile, in a small saucepan, combine cheese, evaporated milk, dry mustard and one dash of cayenne pepper. Cook and stir over medium heat until cheese is melted and sauce is smooth. Cover and keep warm.

    Place the mixed vegetables into a large mixing bowl. Stir in the minced onion and garlic. Add the egg, milk, flour, baking powder sugar, salt and remaining dash of cayenne pepper. Stir until combined.

    Place the olive oil in a 10-inch skillet over medium heat. Using a 1/4 cup measure, drop vegetable batter into hot oil. Cook the fritters for 1 to 2 minutes per side until golden brown. Place on a paper towel-covered plate. Repeat with remaining vegetable mixture to make 12 fritters.

    Place fritters on serving plates. Drizzle with cheesy sauce. Top with toasted onions. Serve and enjoy! Makes 12 fritters
