My brother plants a large garden every year and just the other day his zucchini and yellow squash are now ready. I brought some home and wanted something a little different to do with it where they weren't cooked to a mush.

Once you try this cheesy casserole, you may never eat summer squash another way. This is fantastic! Onions and garlic are a great base for the bake and add tons of flavor. The basil sprinkled on top ends up melting into the two kinds of cheese to create a gooey cheesy layer. The combination of Parmesan and mozzarella really make the dish special. All of the flavors melt together to create a delicious side dish. The end result is as pretty as it is tasty.

Ingredients For summer squash cheesy bake

  • 1 lg
    zucchini, thinly sliced
  • 4 lg
    yellow squash, thinly sliced
  • 1 md
    onion, chopped
  • 4 clove
    garlic, minced
  • 1 Tbsp
    dried basil
  • 1/4 c
    olive oil
  • 1 c
    Parmesan cheese, freshly shredded
  • 1/2 -3/4 c
    mozzarella cheese, shredded
  • salt and pepper, to taste

How To Make summer squash cheesy bake

  • 1
    Preheat oven to 350 degrees.
  • Sauteeing onions and garlic.

    Sauté onions and garlic in two or three tablespoons of olive oil and sprinkle with salt.
  • Coating a baking dish in non-stick spray.

    Prepare a baking dish (approximately 8x8) with non-stick cooking spray.
  • Onions and garlic added to the baking dish.

    Spread the onions and garlic on the bottom of the baking dish.
  • Stacking zucchini and squash in the baking dish.

    Stack zucchini and yellow squash alternating vegetables. Make rows in the baking dish, standing the vegetables vertically in the pan. Continue until you fill the pan.
  • Summer squash sprinkled with seasoning and olive oil.

    Sprinkle squash with dried basil, salt, and pepper; then drizzle with olive oil.
  • Covered dish baking in the oven.

    Cover pan with foil and bake in 350 degree oven for about 15 minutes.
  • Parmesan cheese sprinkled onto the squash.

    Uncover pan. Cover vegetables with Parmesan cheese. Return to oven for 10 minutes.
  • Mozzarella cheese sprinkled onto the baking dish.

    Then cover vegetables with mozzarella cheese and return to oven for about 5 minutes until cheese gets golden brown.
  • Broiling the bake under the broiler.

    You can also place it under the broiler.
