Stuffed Delicata Squash

    clove garlic diced finely
  • 1/2
    red onion diced finely
  • 4-5 strips
    bacon, uncooked
  • 2
    delicata squash
  • 3 Tbsp
    goat cheese
  • 1 tsp
    tajini seasoning

    bok choy

How To Make

    Set oven to preheat 375 degrees. Wash squash thoroughly Cut squash into 1/2 inch slices cleaning out seed centers. Dice garlic, onion and bacon and set aside. Cut bok choy into small pieces. Spray cookie sheet with pam. Place squash rings on cookie sheet. Stir diced, garlic, onion and bacon adding 1/2 teaspoon tajini seasoning. Spoon mix into squash rings saving a few spoons for final topping. Add cut up bok choy. Top with remaining mixture. Place in oven for about 25 minutes. Remove and add goat cheese sparingly on top of each squash ring. Sprinkly remaining 2/2 teaspoon tajini on top. Serve hot from the oven.
