Ingredients

  • 2 c
    grated squash or zucchini
  • 1
    egg
  • 1/2 c
    all-purpose flour
  • ·
    salt and pepper, to taste
  • 1 small
    yellow onion, chopped fine

How to Make Squash Croquettes

Step-by-Step

  1. Squeeze as much liquid out of the squash by wrapping in a tea towel and wring out.
  2. Mix all ingredients well and let sit for about 5 minutes.
  3. Heat a skillet over medium heat and add a small amount of oil or use cooking spray.
  4. Scoop about 1/3 cup into the skillet. Gently flatten to about 1/2 inch thick.
  5. Cook on both sides until center is set and outside is golden brown.
