Ingredients For squash cakes

4 mdyellow squash, grated

1/2 tspgrated onion

1 smred bell pepper, chopped

1 smyellow bell pepper, chopped

1egg, beaten

1/2 call purpose flour

1 pkgequal (or 1 tsp sugar)

salt and pepper to taste
How To Make squash cakes

1Combine squash with onion, peppers and egg. Mix well. Add flour, Equal (or sugar), salt and pepper. Mix well

2Mold into cakes. If squash seems too thin add more grated squash to get the right consistency. Place in a hot, nonstick pan. No grease is needed, let squash cakes brown on each side.

3Serve immediately.
