Ingredients
- 4 medium yellow squash, grated
- 1/2 teaspoon grated onion
- 1 small red bell pepper, chopped
- 1 small yellow bell pepper, chopped
- 1 egg, beaten
- 1/2 cup all-purpose flour
- 1 package equal (or 1 tsp sugar)
- salt and pepper to taste
How To Make squash cakes

Step 1Combine squash with onion, peppers and egg. Mix well. Add flour, Equal (or sugar), salt and pepper. Mix well

Step 2Mold into cakes. If squash seems too thin add more grated squash to get the right consistency. Place in a hot, nonstick pan. No grease is needed, let squash cakes brown on each side.

Step 3Serve immediately.
