Ingredients

4 medium
yellow squash, grated
1/2 tsp
grated onion
1 small
red bell pepper, chopped
1 small
yellow bell pepper, chopped
1
egg, beaten
1/2 c
all purpose flour
1 pkg
equal (or 1 tsp sugar)
salt and pepper to taste

How to Make Squash Cakes

Step-by-Step

  • 1Combine squash with onion, peppers and egg.
    Mix well.
    Add flour, Equal (or sugar), salt and pepper.
    Mix well
  • 2Mold into cakes.
    If squash seems too thin add more grated squash to get the right consistency.
    Place in a hot, nonstick pan.
    No grease is needed, let squash cakes brown on each side.
  • 3Serve immediately.
