bonnie’s slow roasted tomatoes with garlic & basil

This is a simple recipe, but there is nothing simple about the wonderful flavor of these delicious, home grown, roasted tomatoes. Store them in a jar in the fridge and use them on avocado toast, appetizers, garlic bread, pasta, fish, meats, eggs, soups, or any dish where you want to add flavor. They can even be frozen. What a great way to use up the end of season tomatoes from your garden. Enjoy!

Ingredients For bonnie’s slow roasted tomatoes with garlic & basil

  • 24 firm ripe small tomatoes
  • 1/2 cup olive oil
  • 4 to 8 large cloves of garlic chopped
  • 4 tablespoons fresh or dried leaf basil
  • 1 teaspoon salt
  • 1 teaspoon coarse black pepper

How To Make bonnie’s slow roasted tomatoes with garlic & basil

  • PICK FIRM RIPE GARDEN TOMATOES AND  ALL ABOUT THE SAME SIZE.

    Choose firm, ripe garden tomatoes, all about the same size. The ones I used here were about the size of a golf ball. You can also use this cooking method for cherry tomatoes.
  • REMOVE STEMS, CUT THE TOMATOES IN HALF, AND CORE.

    Rinse the tomatoes and pat dry. Remove the stems. Cut them in half across the tomato. Core and remove the seeds.
  • PREPARED TOMATOES FOR ROASTING

    Place the tomatoes in a jelly roll pan or similar pan with a rim. I used a heavy Wilton pan.
  • OLIVE OIL, CHOPPED GARLIC, DRIED LEAF BASIL, SALT AND PEPPER.  SHAKE.

    Mix olive oil, Chopped garlic, (I used 8 large cloves; we love garlic!) add 4 tablespoons of dried leaf basil, and one teaspoon salt and one teaspoon coarse black pepper.
  • PREPARED TOMATOES WITH OIL MIXTURE POURED OVER THEM.

    Put the lid and ring on the jar and shake until mixed. use a spoon to drizzle the mixture over all the tomatoes, making sure the garlic gets in each tomato half.
  • ROASTED TOMATOES, FRUIT OF THE GODS!

    Roast the prepared tomatoes in the oven 325 for 2 1/2 hours. (If you are using bigger tomatoes, it make take a few minutes longer.)
  • LIFT THE ROASTED TOMATOES FROM THE PAN

  • TRY THEM ON YOUR TOAST WITH CREAM CHEESE!

    Roasted tomatoes are delicious on toast with a little cream cheese. Add avocado! Bacon! Yummy!
  • STORE THE TOMATOES IN A WIDE MOUTH JAR IN THE FRIDGE

    Store in wide-mouthed jar in the fridge for up to 5 days. Use them in anything your creative imagination can come up with.
  • THEY CAN BE FROZEN!

    These roasted tomatoes may be frozen. Fill pint wide- mouth jars 1 1/2 inches from the top of the rim, place them in the freezer WITHOUT a lid on until the tomatoes are frozen. Then apply the lid and ring. You can defrost the jar in the fridge.
