Ingredients

  • 2 lb
    yellow squash
  • 1 pkg
    andouille
  • 1/4 lb
    country ham pieces, chopped
  • 1 medium
    onion, chopped
  • 3 medium
    garlic cloves, minced
  • 1 tsp
    crushed red pepper
  • ·
    salt and pepper to taste

How to Make Simmered Summer Squash

Step-by-Step

  1. Cut sausage on in small chunks
  2. Cut squash 1/2 inch slices
  3. In a large skillet, fry sausage and country ham until browned
  4. Add onion, garlic, red pepper. Sautee for about 1 minute
  5. Add squash. Cover and simmer for about 15 minutes. No peaking.
  6. Uncover, add salt and pepper, mix gingerly and serve.
