side essentials: bacon fried cabbage

Fried up a batch of this last night, and served it with spicy garlic chicken, topped with duxelles (I will post those recipes later). At the time, it seemed like a strange combination of ingredients, but I was in a mad scientist/chef kind of mood. So, I ploughed bravely forward. The good news is that everyone enjoyed dinner. The bad news is that there were no leftovers. So, you ready… Let’s get into the kitchen.

Ingredients For side essentials: bacon fried cabbage

  • 3 slice
    bacon, diced
  • 1/2 md
    yellow onion, thinly sliced
  • 2 clove
    garlic, minced
  • 1/2 md
    cabbage, cored and sliced
  • 1 tsp
    kosher salt, fine grind, or to taste
  • 1 tsp
    black pepper, freshly ground, or to taste
  • OPTIONAL ITEMS
  • 1/4 tsp
    coconut sugar
  • 1 pinch
    baking soda

    You will need a large skillet or sauté pan to make this recipe.

    What about the sugar and baking soda? The sugar adds a bit of sweet to the cabbage, and the baking soda cuts the acid and reduces some of the gas that cabbage can produce… but just a pinch.

    If you are using really, really lean bacon, you might need to add a bit of oil or butter to the pan. I would recommend a tablespoon of unsalted butter.

    Gather your ingredients (mise en place).

    Add the bacon to a skillet over medium heat.

    While the bacon is slowly crisping, slice up the cabbage and onions, and mince the garlic. Work, Work, Work...

    Allow the bacon to slowly render its grease, about 7 – 10 minutes.

    When nice and crispy, remove the bacon with a slotted spoon, and reserve.

    It is not necessary to drain it on paper towels.

    Add the thinly sliced onions to the bacon grease and keep the heat at medium.

    Stir the onions until they begin to soften and turn translucent, about 3 – 4 minutes. Then add the garlic and stir for about 60 seconds.

    Toss in the cabbage, along with the salt and pepper.

    Using a pair of tongs (if you have some), toss the ingredients together, as the cabbage wilts, about 5 – 7 minutes.

    If you are using the optional ingredients, add them in as you are tossing the cabbage.

    Do a final tasting for proper seasoning.

    Add in the bacon and serve while nice and warm. I usually, plate the cabbage and sprinkle some bacon on top, or you could mix it in with the warm cabbage. Enjoy.
