Have an abundance of zucchini you need to use up? Do you just LOVE zucchini the way I do? This is the recipe for you. If you've got one of those zucchini the got away from you and grew a foot over night then just grate it up and viola, you've got the most delicious tasting Zucchini squares you've ever had. I started making these one year when I just couldn't keep up with the over growth of zucchini in our garden. They are great hot, room temp or even cold. Eat them plain or top them with Marinara sauce. I bet the kids will eat these vegetables. Add any herbs you wish or change up the cheese.

  • 4 lg
    eggs
  • 3 c
    zucchini, grated (liquid squeezed out)
  • 1 c
    bisquick
  • 1/2 c
    red onion, chopped
  • 1/2 c
    parmesan cheese, grated
  • 1/4 c
    vegetable oil
  • 2 Tbsp
    fresh basil, chopped
  • 1 Tbsp
    fresh oregano, chopped
  • 1 Tbsp
    dijon mustard
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    salt and pepper
  • 4 slice
    bacon, cooked and chopped

    Preheat oven to 350°. Spray a 9x13 cake pan with non-stick spray very generously. **You can also make these in muffin pans, you may need to adjust your cooking time. Watch closely for doneness and brownness.**

    Beat eggs and then combine all ingredients and mix well with a spoon until very well incorporated.

    Spread in prepared pan and bake for 25 to 30 minutes, until edges are golden brown. Let cool for 10 minutes, then cut into 24-32 pieces.
