At my age, I'm sorry to say, I've just begun to be a big fan of veggies. Especially red peppers! YUM! You can use any veggies that you'd like in this recipe...and it's so easy...and healthy, too!

Ingredients For roasted vegetables

  • as many veggies that you'd like. i prefer,
  • green, yellow and red peppers
  • carrots, onions, asparagus, squash,
  • olive oil
  • basil, garlic

How To Make roasted vegetables

    Dice veggies. If you are using asparagus, dicd and set it aside. Toss in a TBS or so of Olive oil, add garlic, or garlic powder, and dried basil.

    Put in a roasting pan coated with Olive Oil. Put in the oven and bake for 30 minutes at 350 degrees. During the last 15 minutes, throw your Asparagus in. It cooks really fast!

    You can serve this immediately just like it is. OR, throw it in a pan with olive oil and garlic. Add a can of any type of diced tomatoes you'd like....the hot ones, the basil, oregano ones, and serve over any type of pasta, topped with Parmesan Cheese. If you have people coming over at six, make your veggies ahead of time and let them sit and "blend" until your guests arrive. Prepare your pasta and throw veggies on top of pasta and top with cheese!

    For Pizza....use your roasted veggies. Throw it on a pizza crust. Top with Feta Cheese, or cheese of your choice. Drizzle Basil or Olive Oil on top, sprinkle Basil on top, (if you don't like basil, use a spice of your choice), and bake at 425 for 15 minutes or until your crust is golden.
