I didn't have plum tomatoes, so I used regular tomatoes and quartered them; then, scooped out skin and seeds.

Ingredients For roasted tomatoes

3 or 123 ripe tomatoes or 12 plum tomatoes

4 Tbspolive oil

1-1/2-2 Tbspbalsamic vinegar

2garlic cloves

2 tspsugar

1-1/2-2 tspkosher salt

1/2-2 tspfreshly ground black pepper
How To Make roasted tomatoes

1halve plum tomatores lengthwise or quarter regular tomatoes, cores and seeds removed and arrange the tomatoes on a sheet pan, cut sides up, in a single layer.

2Drizzle with Olive oil and balsamic vinegar. Sprinkle the minced garlic, sugar, salt and pepper over the tomatoes.

3Roast at 450 degrees for approximately 15-25 minutes, until the tomatoes are concentrated and beginning to caramelize.

4Serve warm or at room temperature
