Ingredients For ralph's zucchini medley

  • 1/2 bag mini sweet peppers ( jullianne ) , 1 large onion coarse chop, 8 0z. scliced mushrooms, garlic 4-5 large cloves ( diced small)
  • 4 tlbsp. salted butter, 2 tlbsp. olive oil, zucchini and yellow squash ( good if all zucchini) approx. 1/4 slices
  • salt and pepper to taste, 2 tsp. oregano, 2 tsp. italian seasoning ( or to taste
  • grated parmeason or romano cheese
  • 1- approx. 12 oz. bag frozen mixed veggies (carrots,peas and corn) 5 min in microwave and after all other veggies removed from pan 3- min. in same pan to pick up flavors

How To Make ralph's zucchini medley

    melt 1 tlbsp. butter and 1- tlbsp. of oil in pan , sauté chopped onions till translucent, add garlic peppers and saute till soft , add mushrooms cook till soft. Remove from pan.

    add 1 tlbsp. of butter and 1 tlbsp. of oil in same pan add zucchini and salt and pepper to taste, also Italian seasoning and oregano. Saute till soft . Remove in large bowl and toss lightly with oinions, garlic and peppers mix.

    toss mixed veggies in lightly and top with some grated cheese
