I received this recipe from a neighbor during our annual subdivision get-together. My husband really liked this side dish. It is a refreshing dish to serve during the summer months. It is a perfect side to make for outdoor barbeques.

Ingredients For pimento vegetable salad

  • 1 can
    french style green beans
  • 1 can
    la seur peas - small spring peas
  • 1 can
    white shoepeg corn
  • 4 oz. jar
    pimento - chopped
  • 1 bunch
    green onions - chopped
  • 1
    green pepper - chopped
  • DRESSING:
  • 1/4 c
    vinegar
  • 1/4 c
    sugar
  • 1/2 c
    salad oil
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper

How To Make pimento vegetable salad

    Combine all dressing ingredients and bring to a boil.

    Cool completely.

    Drain all vegetables and put in a medium sized bowl.

    Add the dressing to the vegetables and mix well.

    Refrigerate at least 2 hours or overnight and serve!
