Oven Baked Beet Root

Ingredients

3 mediumbeet roots, raw

2 Tbspolive oil

·salt and pepper

1 tsprosemary, dried

3 1/2 ozgreek yogurt
-
·salt, to taste

1 tsphorseradish, prepared (or more to taste)

·salad herbs, optional
How to Make Oven Baked Beet Root
- Preheat oven to 350°F (convection oven)
- Peel the beets and slice, about 1/2 inch thick
- In a bowl, combine sliced beets with salt, pepper, rosemary and oil.
- Place slices on a baking paper lined baking tray and bake at 350°F for about 30 minutes. Turn the slices half way through the baking time.
- While baking, combine yoghurt, horseradish, salt to taste and salad herbs
- Serve the beet root slices hot with the horseradish dip
