  • 3 medium
    beet roots, raw
  • 2 Tbsp
    olive oil
  • ·
    salt and pepper
  • 1 tsp
    rosemary, dried
  • 3 1/2 oz
    greek yogurt
  • ·
    salt, to taste
  • 1 tsp
    horseradish, prepared (or more to taste)
  • ·
    salad herbs, optional

How to Make Oven Baked Beet Root


  1. Preheat oven to 350°F (convection oven)
  2. Peel the beets and slice, about 1/2 inch thick
  3. In a bowl, combine sliced beets with salt, pepper, rosemary and oil.
  4. Place slices on a baking paper lined baking tray and bake at 350°F for about 30 minutes. Turn the slices half way through the baking time.
  5. While baking, combine yoghurt, horseradish, salt to taste and salad herbs
  6. Serve the beet root slices hot with the horseradish dip
