This is another OLD (saved) great recipe of my dear 91 year old friend Katherine. This recipe is one of her favorites. Hope you enjoy it.

Ingredients For ms katherine's chinese beets

  • 3 can
    15 oz beets, cut into chunks
  • 1 c
    sugar
  • 2 Tbsp
    cornstarch
  • 1 c
    vinegar
  • 24
    whole cloves
  • 3 Tbsp
    catsup
  • 3 Tbsp
    cooking oil
  • dash of salt
  • 1 tsp
    vanilla extract
  • 1 1/2 c
    beet juice
  • 5 minutes of your time

How To Make ms katherine's chinese beets

  • 1
    Use a large, shallow pan and dump in sugar and cornstarch, stir and mix well.

    Add: Vinegar, cloves, catsup, oil, salt and vanilla. Again, stir well.

    Open the cans of beets, cut into bite size pieces, add the beet juice (1 1/2 cups, discard the rest). Place into the pan.

    Cook over medium heat 3 minutes, stirring all the time until the mixture thickens. You can store left overs in refrigerator several days. ENJOY
