I love squash, and this one is delicious. I saved the seeds and toasted them, yummy. I actually didn't add the brown sugar or spices, but just crushed a clove of garlic and threw it into the hollow of the squash while it was baking. I do this with spaghetti squash too. Sometimes I prefer the savory to the sweet.

Ingredients For mashed acorn squash

  • 1
    acorn squash
  • olive oil
  • 1/4 stick
    melted butter or earth balance
  • 1/4 c
    brown sugar
  • 1 tsp
    nutmeg or cinnamon
  • salt and pepper to taste

How To Make mashed acorn squash

  • 1
    Preheat oven to 400'F, brush the inside of the squash with the olive oil and sprinkle with salt and pepper.

    Place on a baking sheet for 45 minutes.

    When done remove the insides of the squash and place in a mixing bowl. Add the butter, nutmeg or cinnamon and brown sugar until smooth. Serve warm.
