These beets were to be used in a Marinated Beef and Beet Salad with Blue Cheese Dressing recipe. The steak is also cooked sous vide style, thinly sliced and tops mixed greens, beets, radishes and walnut pieces, then topped with a blue cheese/sour cream dressing. The beets were perfect just by themselves. *NOTE: I got the blackberry ginger balsamic vinegar from www.oliveparistx.com I can't wait to try this again with the Tangerine Balsamic Vinegar I recently purchased.

Ingredients For marinated beets sous vide method

  • 1/2 lb
    beets, peeled and quartered
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    balsamic vinegar (i used a blackberry ginger balsamic vinegar) *see note
  • 2 Tbsp
    honey
  • 1
    zest from one lemon
  • 1 1/2 Tbsp
    lemon juice

How To Make marinated beets sous vide method

    Fill and preheat the water oven to 183F.
  • 2
    Wash peel and quarter beets. Place quartered beets in a BPA free plastic bag (I used a vacuum seal bag).

    Drizzle beets with olive oil. Add in the rest of the ingredients and seal.

    After sealing, submerge in the hot water for 3 hours. Lower the temperature 134F and keep submerged for another 1 1/2 hours.
