low carb sauteed tilapia with salsa over zoodles
This is a delicious and healthy "pasta" dish. I've replaced regular pasta with zucchini noodles - so good! I hope you enjoy preparing and sharing this dish with your family and friends...with no guilt I might add. Nutrition Information at the bottom of recipe. Enjoy!

Ingredients For low carb sauteed tilapia with salsa over zoodles
- FOR SALSA:

1 cseeded and diced roma tomatoes
-
1 smavocado, diced
-
1/4 cfinely diced onion
-
6spanish olives, sliced
-
1jalapeno pepper, finely diced (optional)
-
1 tspminced cilantro leaves
-
1 tsplime juice
-
4tilapia fillets
-
1 tspolive oil
- FOR SEASONING MIX:
-
1 1/2 tspground cumin
-
1/2 tspsmoky paprika
-
1/2 tspsalt and pepper
-
1/4 tspgarlic powder
- FOR ZUCCHINI NOODLES:
-
2medium zucchini
-
2 clovegarlic minced
-
1 tspolive oil
-
pinch of salt and pepper to taste
How To Make low carb sauteed tilapia with salsa over zoodles

1Combine ingredients for fresh salsa in a small bowl. Refrigerate until ready to serve meal.

2Combine ingredients for seasoning mix and set aside.

3Using a vegetable slicer with a spiral cutting attachment make your "noodles". If you do not have this capability, you can use a food processor with a large grating attachment. A manual hand grater will do the job as well - you will just have a different shape zucchini. (: Place on paper towels or a clean tea towel and cover. Pat to remove as much excess liquid as you can.

4Heat a large skillet or sautee pan to medium high heat. Add olive oil and then zucchini - toss to coat. Cook for about 5 minutes. Add garlic and cook for another 2 minutes. Turn off heat and keep warm. You will salt and pepper just before serving. (if you would like) If you salt the zucchini too soon it will render a lot of liquid.

5Sprinkle reserved seasoning on both sides of tilapia fillets to taste.

6Heat a medium skillet to medium high heat. Add olive oil. Place fillets in skillet and cook 3-5 minutes until fillet is firm. Turn and cook another 2-3 minutes.

7To serve: Place 1/2 cup zucchini on plate. Top with a fillet. Spoon 1/4 cup fresh salsa on top. Enjoy!
