In talking about trying to find the recipe for Grandma Robinson's scalloped corn, Robin told me about this recipe that she makes in the crockpot. Considering I love cornbread, this sounded right up my alley. I am so glad she shared it with me! Texted to me 10-19-20

Ingredients For jiffy crock pot sweet corn, robin's

  • 2 box
    jiffy corn muffin mix (8.5 oz)
  • 2 can
    cream sweet corn
  • 2 can
    whole sweet corn, drained
  • 1/4 c
    salted butter, melted (1/2 stick)
  • 2
    eggs, beaten
  • 1 c
    milk
  • 1/3 c
    honey or sugar
  • 1 c
    sour cream

    In large mixing bowl, combine all ingredients, mix thoroughly. Spray 3.5 qt crockpot with PAM or use liner. Cover and cook on high 3 hours, or low 6 hours. It's often done early, so keep checking on it. Serve and enjoy.

    To make in the oven: Oven to 375 degrees. Spray 9x13 with PAM. Bake 35-45 min until baked or until center is set and not jiggly.

    I made 10.30.20, omitted the honey and baked in oven. Took 55 min
