Good for you and endlessly adaptable! I love having a salad like this for lunch... it's satisfying all on its own.

    romaine lettuce, torn (or your favorite)
  • 1 c
    spinach, torn
  • 1
    small pear (or apple) diced
  • 1
    celery stalk, sliced
  • 2 Tbsp
    dried blueberries (or cranberries or raisins)
  • 2 Tbsp
    chopped walnuts (or favorite nuts)
  • 1 Tbsp
    mixed seeds (shown; raw pumpkin seeds and raw sunflower seeds)
  • SIMPLE WALNUT OIL VINAIGRETTE

  • 2 Tbsp
    walnut oil (or grapeseed or olive oil)
  • 2 tsp
    lemon juice (or apple cider vinegar)
  • 2 tsp
    chopped fresh parsley
  • ·
    salt and coarse ground black pepper, to taste

How to Make Fruit, Nut, and Seed Salad

Step-by-Step

  1. Combine all salad ingredients and toss.
  2. Combine vinaigrette ingredients and whisk or shake vigorously.
  3. Drizzle salad with dressing. Enjoy!
