Blue Ribbon Recipe

When corn is fresh in the summer, we love to use it in different ways. We plan to make this fresh corn salsa again. It's a touch sweet from the corn and kiwi, but tangy and has a hint of heat from the jalapeno. Kiwi in salsa is definitely a different ingredient but it works. Ingredients

  • 3 ears
    fresh corn roasted whole in oven or grill till tender
  • 1
    fresh jalepeno, minced
  • 1/4
    red onion minced
  • 1
    avocado, diced
  • 1
    fresh kiwi, peeled and diced
  • 2 Tbsp
    fresh cilantro, minced
  • 2 Tbsp
    olive oil
  • pinch
    salt and pepper
  • 2 tsp
    fresh lime juice

How to Make Fresh Corn Salsa

Step-by-Step

  1. Remove corn from the cob.
  2. Mix all fresh ingredients.
  3. Then whisk together oil and vinegar. Drizzle over salsa and toss gently. Refrigerate for at least an hour to mix flavors. Serve with tortilla chips.
