Is it summer without zucchini chips? This faux-fried zucchini recipe is crisp and delicious. The zucchini rounds are baked - not fried - which saves on calories. Made with just four ingredients, these are great as a side dish or if you're looking for a little snack.

Ingredients For faux- fried zucchini

  • 2 lg
    zucchini
  • 4
    eggs
  • 1 c
    Parmesan cheese, grated
  • Italian bread crumbs

How To Make faux- fried zucchini

  • Whisked egg in a bowl.

    Beat raw eggs in a large bowl until well mixed.
  • Sliced zucchini on a cutting board.

    Slice zucchini into 1/4 inch thick rounds.
  • Dipping zucchini into egg.

    Dip zucchini in egg batter.
  • Coated zucchini on a greased baking sheet.

    Place on greased cookie sheet or cake pan in one layer.
  • Parmesan cheese sprinkled over the zucchini.

    Sprinkle grated Parmesan on zucchini slices.
  • Bread crumbs sprinkled over zucchini.

  • Baking zucchini in the oven.
