My dear daughter Luanne is always asked to make the English Pea Salad for Thanksgiving or any other family get-together. Mainly, because that was the first time her in-laws had ever eaten it and they completely fell for it! LOL I decided to give her a break this year for Thanksgiving ... especially since I had just made some myself. This is one of those quick and easy dishes you can make in just a few minutes but is very delicious too! The amount of each ingredient is a matter of taste. We like a lot of crunch, sweet pickle and cheese and like it very creamy too!

Ingredients For english pea salad my way

  • 4 can
    peas, drained
  • 3
    eggs, hardboiled
  • 4 - 6
    green onions, sliced
  • 1 1/2 c
    sweet pickles, sliced
  • 1-2 c
    miracle whip
  • 1 c
    velveeta cheese, grated or cubed

How To Make english pea salad my way

    Place peas, green onions and chopped sweet pickles in a large bowl.

    Add Miracle Whip to desired creaminess. (I also pour about a tablespoon or 2 of sweet pickle juice in.)

    Dice hardboiled eggs and add to peas. (I always salt and pepper my hardboiled eggs before stirring them into a salad.)

    Add Velveeta cheese, either grated in a bag or diced from a box. Stir well, cover and refrigerate at least 4 hours but even better made the day before serving.
