This corn pudding recipe is made in the Down East Carteret County (coastal), NC style. A little sweet with a hint of nutmeg. It is a perfect side dish with pork dishes. One of my favorites!

Super creamy, this corn pudding recipe tastes like dessert. Easy to prepare, this casserole will be a great side dish for Thanksgiving or Christmas. We loved the hint of nutmeg in the dish.

Ingredients For down east corn pudding

  • 1 can
    cream style corn (14.75 oz)
  • 2 lg
    eggs, beaten
  • 1/2 stick
    butter or margarine, melted
  • 1 c
    evaporated milk
  • 1/2 c
    sugar
  • 2 Tbsp
    self-rising flour
  • 1/8 tsp
    salt
  • 1/8 tsp
    nutmeg

How To Make down east corn pudding

  • Creamed corn and melted butter in a bowl.

    Mix cream-style corn and melted butter or margarine together in a bowl.
  • Sugar, flour, eggs, salt, and nutmeg added to bowl.

    Add sugar, flour, eggs, salt, and nutmeg, stirring well.
  • Slowly adding milk.

    Add milk gradually and stir well.
  • Corn mixture poured into a baking dish.

    Pour into a 2 quart casserole dish (square or oval), sprayed with non-stick cooking spray.
  • Baking corn pudding.

    Bake at 400 degrees F for approximately 40 minutes or until set.
